
4 oz butter, softened
1 c firmly packed dark brown sugar
2 extra large egg, room temperature
2 tblsp cocoa powder
1 tsp vanilla extract
1 cup all-purpose flour
1/4 tsp baking powder
1/4 tsp salt
2/3 c unsalted cashew nuts, coarsely chopped
semi-sweet chocolate chips
1/2 tblsp oil
1. Heat oven with rack to 350 degrees.
2. Put foil in a 8x8 square pan and butter it wel. I like to sprinkle some flour too.
3. beat butter in a mixer till light and fluffy about 2 mins. Add sugar and cream for another 2 mins.
4. Beat eggs in and add vanilla extract in a different bowl keep aside.
5. Sift all dry ingredients and start adding to the mixture. Add butter mixture then some dry mixture. Do this in three parts. Use spatula to scrape down the sides of the bowl and make sure mixture is mixed well.
6. Add nuts and chocolate chips to the mixture.
7. Pour into baking dish and bake for about 30 mins.
(When you do the toothpick test, it should come out clean)
