But I need to divulge a detail before I go into detail about the meal. I had a handmade card for him with some sweet words in it including "I Love You Snuggly" (another nickname). He held me and said, "So I have something to say to you on Valentine's Day... I think I love you." To which I giggled and said "you think? what is that, fake?" LOL/...I think it made it easier on him too 'cause he seemed a bit awkward saying it. However, I said it meant a lot to me. Now, the food :-) We decided upon Parmesan Chicken without the parmesan. He basically did all the work... gutted the chicken, made the marinara from scratch and breaded the chicken breasts with a mixture of bread crumbs, flour, italian herbs and egg. We bought some ciabatta bread from Whole Foods. The meal was DELICIOUS!! Probably the best breaded chicken anything I have had... and the bread was awesome too. The marinara was a bit acid-y but I think that was because we used tomato paste out of a can mixed with real tomatoes. Next time we could avoid the paste. So, I was floored at how delicious it was... and easy! I think I'll have to try a baked version myself next time.

Love Plus Food Indeed!
So, I had told Miggity I really didn't have a huge inclination towards celebrating V-day. But he said we should at least do something to mark the day. Which I was pleasantly surprised to hear and easily agreed to. He suggested cooking a fancy meal.
