the cake was just perfect... however, I would be interested in learning if cake flour would have made it softer in texture. This cake though was really good... a bit dense, but I tend to enjoy my pound cake that way (it soaks the milk real well then and the cake doesn't fall apart when dipped).
Pound Cake Recipe:
2/3 cup butter
1 1/2 cups sugar
2 eggs
2 cups sifted flour
3/4 teaspoon baking powder
3/4 teaspoon salt
2/3 cup milk
1 teaspoon vanilla
Preheat oven at 325 degrees. Mix dry ingredients and keep aside. Melt butter. Mix butter, dry mixture, and egg (little by little) in a mixer. Add milk in two portions. Add vanilla essence. Don't over-mix. Pour batter into a loaf pan or bundt pan. Bake at 325° for about 1 hour. Test with a fork.
