Absence Makes the Heart Grow Fonder...

July was crunch time at work. We were getting prepared for the big trade show in Atlanta. I was psyched because I was going for nine days to be part of this awesome experience. Once I was there, by day two I was exhausted, in a defeated sort of way... and I missed Miggity. I really, really missed Miggity. I called him that second night and broke down. He was gentle and supportive. And by the end of the conversation, I felt empowered to get up and run on the treadmill and sweat off the emotions. The trip got significantly better and I landed up having a good time. And on day 7, Miggity tells me over the phone he's going through Mili withdrawal :-) That was the first time ever he had been that blatantly verbally expressive. I kept thinking, wow, did HE say that? I didn't know he could!!
He picked me up from the airport and from that day we saw eachother for the next 5 days in a row! He said, "I have decided I am going to be more expressive about things from now". That distance did us good. It shifted the relationship into third gear. And it has turned out to be the Summer of Bliss. Ahh... Love is Grand.
He has also cooked for me since then. Pan-fried chicken and vegetables. And it was delicious.
We have had plenty of meals together these past two months. Today's was particularly delicious. We used my ex in-laws recipe. Miggity made a couple of variations and did most of the work.
We ate this with Orowheat 12 grain bread.

Curried Chicken Salad
3 lbs. chicken diced/cubed - pan cooked
1 cup celery
red onion chopped (generous amount)
1/2 cup miracle whip
1 tsp. cumin
1/2 tsp. tumeric
1/2 tsp. chilli powder
(no salt needed)

Pan cook chicken. Mix whip and spices. Then add all the ingredients and mix. Eat with bread and enjoy!

  1. You updated! My stalking has paid off. Excellent. It looks like you guys had an excellent meal. Now I'm inspired to make my chicken salad. I wonder if the inspiration will last long enough to actually produce the chicken salad.
