A Blackberry Muffin Morning

I was awoken at 5AM from a bad dream involving spiders and snakes. Not nice. I remained trying to sleep or at least give my body a little more rest. But then at 6:30AM I heard a crew of Mexican construction workers start moving around the outside of the house. Soon one of them was knocking on the door; then Sweetness goes ballistic, and next thing I know I am having to move my car to a different spot so they can drag their truck in. After moving my car, I came back in and the very loud sounds of hammering on the roof started. They were putting down new shingles. I said to hell with all this, I am making muffins!
And so, on this very early morning, I baked Blackberry Muffins that turned out quite good.


Here's the recipe:
fresh blackberries
1/4 cup butter
1 1/3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
little less than 1/4 teaspoon salt
1/2 cup milk
1 egg
1/4 teaspoon vanilla essence
Preheat oven to 400 degrees. Mix all dry ingredients in a mixer. Melt butter in a pan and add milk and eggs to it. Put wet ingredients in the mixer now and start adding dry mixture to it in small portions. Let it mix to a good, even consistency. Add blackberries and fold in the mixture. Put batter in a buttered and floured 12-cup muffin pan (no need for baking cups). Bake for 25 minutes.
