It is a challenge to get the boy to stay the night over. I've done a fair bit of analyzing as to why and here's what I came up with- maybe he doesn't want to get too attached too quickly. Maybe he doesn't want me to get too attached too quickly. Maybe he just likes sleeping in his own bed. Or most likely, he just doesn't feel like it and there is no deeper reason behind it.
So, when he said he'd rather stay over at my place this past Saturday, I was pleasantly shocked. He had a perfectly logical reason for this though- people really were driving like shit at 1:30AM. Sadly he had the most ghastly uncomfortable sunburn all over his back and chose to sleep on the sofa. This was out of consideration so as not to wake me up with all his moving. I get it. So he may not throw this romantic orchestration displaying his emotions, but I see glimmers of his affection every now and then. Quite honestly, the sheer simplicity of it makes me smile. Lessons I can learn here: Empty my mind; don't think too much. Pace. Savour.
And savour is exactly what I did Sunday morning. We made Curried Scrambled Eggs and the recipe is worthy enough to be published. We enjoyed this with rosemary bread from Central Market.
Curried Scrambled Eggs
(good for two)
4 large eggs
1 medium chopped onion
1 large diced tomato
1 chilli- slit (we used Indian chillies, but you could use any kind)
fresh rosemary
fresh cilantro
pinch of haldi (tumeric powder)
1/2 teaspoon cumin powder
salt to taste
olive oil
Add olive oil to pan and cook onions on medium till they just start to brown. Add the tomatoes, chilli, tumeric and cumin. Cook for a minute and add rosemary and cilantro. Cook for another minute.
Whisk eggs separately and add to pan. Cook the scramble mixture till eggs are still slightly loose. Cooking it too much will dry out the dish.
